What is kombucha?

pronounced kuhm·boo·chuh

Kombucha is an effervescent beverage produced by fermenting sweet tea with a culture of yeast and bacteria (Think: healthy little microbes that help create a happy gut microbiome).

Many people are drinking it for it's probiotic gut-healing benefits, but there are several other benefits to kombucha.

Tea alone is an awesome source of polyphenols which are known to act as strong antioxidants in the body and to decrease inflammation. With kombucha, the fermentation process increases the amount of polyphenols, thus decreasing pain and inflammation.

Kombucha contains small amounts of vitamins and minerals which are produced when the yeast breaks down the sugars, including vitamin C, B1, B6 and B12.

Kombucha also provides organic acids that are antimicrobial, so they fight against bacterial growth. These acids can also promote detoxification by helping the liver get rid of undesired compounds that it has to process.

Finally, a big part of our emotions are influenced by the nerves in our gut, also called "the second brain". A healthy gut leads to peace of mind and an over-all sense of well being
